Millet
Millet is gluten free, alkaline and easy to digest. Rich in lysine, it is considered a high-quality protein. Millet grain is also high in B vitamins. Millet goes great with curried anything. Millet has a good balance of essential amino acids. Use as a bed for sauteed vegetables and chickpea salad.

Add one cup of millet to three cups of broth (or water). Boil, cover, reduce heat to medium and cook for 15 minutes. Remove from heat, let stand for 20 minutes.
For a toasted millet recipe, saute 1 cup of millet, 2 tsp. sesame oil, 1/2 tsp cumin seeds, 1/2 tsp. mustard and once chopped onion for 10 minutes. Cook as above.
