Walnuts add texture to cookies, breads, stuffings, grain and bean salads (perhaps with red onion and mushrooms). Sprinkle over green salads with goat cheese. Dry roast for 8-10 minutes shaking often, until you can smell their armoa and very lightly browned.

Ingredients: 1/4 to 1 cup raw walnuts, salt (optional)
Process: Add raw walnuts to a large cooking pan over medium to medium/high heat. Cook walnuts for 5 to 7 minutes, regularly tossing and stirring. Add salt (optional) and remove from pan when golden brown.
*Hint: crushing walnuts ahead of time releases natural oils for better health and taste.

Ingredients:
3 ripe bananas, mashed
1/3 cup butter, melted
1 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups flour
1/2 cup of walnuts, crushed
Preheat oven to 350F (175C)
In a large mixing bowl:
Mash bananas until smooth,
Stir in melted butter,
Stir in baking soda and salt,
Stir in sugar, beaten egg, and vanilla extract,
Stir in flour,
Mix until smooth, then fold in crushed walnuts
Spray a bread loaf pan with non-stick cooking spray
Pour in banana nut bread mixture
Bake for 1 hour, or until inserting a tester stick comes out clean
Let cool for 10 minutes before carefully removing with a knife
Bread loaf can be sliced, wrapped in plastic wrap, and stored in refrigerator/freezer
