Coconut Flour
A by-product of coconut milk production, coconut flour is made from ground, dehydrated and defatted coconut meat. The naturally gluten free flour has a light coconut scent and will leave a slightly sweet coconut flavor in baked goods if other ingredients are not strongly flavored. Store coconut flour in an airtight container at room temperature. Shelf life is about 1 year.

Coconut flour can be used to replace up to 20% of all purpose flour in recipes when combined with equal amounts of liquid. Coconut flour is very absorbent and lends a very moist texture to cakes and muffins.
