Buckwheat Flour
Use bulk buckwheat flour for making for making buckwheat pancakes, waffles, breads and pastas. Buckwheat flour is not part of the wheat family and can be used for wheat-free cooking. Despite the unfortunate name, Buckwheat flour is related not to wheat but to rhubarb. It has a strong taste and is easily accepted when used in small amounts to give flavor to bland flours. Try using a tablespoon or two when you start to include this flour in your diet.
There are many buckwheat health benefits including low in fat, high in potassium, low in sodium, and no cholesterol.
For buckwheat pancakes or waffles mix 1-1/2 cups of milk, 3/4 cup of millet flour, 1/4 cup of buckwheat flour, 1 beaten egg and 1 tbsp. of baking powder.
