For a long time, the answer to “can I use an electric canner for pressure canning?” was no — at least not safely. Answers to Common Questions

Is this the same as a regular electric pressure cooker or Instant Pot?
No — and this matters for food safety. Standard electric multi-cookers, including Instant Pots, have not been validated for pressure canning low-acid foods. The USDA and the National Center for Home Food Preservation have explicitly warned against using them for this purpose because they don't reliably maintain the temperatures required. The Presto Precise was engineered specifically to meet USDA pressure canning guidelines. It's a different product built for a different job.
Do I need to adjust anything for my altitude?
No. The internal sensor handles that automatically. This is one of the real advantages over stovetop canners, where altitude adjustments are required and can be easy to get wrong. Whether you're at 800 feet in the valley or up over 3,000 feet in the mountains, the Presto Precise maintains the correct temperature without any input from you.
What's the difference between the 23-Quart and the smaller Presto Precise model?
The main difference is height and capacity. The 23-Quart (this model) is designed to hold quart-size jars for pressure canning — up to 4 at a time. The 16-Quart model is more compact and better suited for pint and half-pint production. Both share the same digital controls, USDA-compatible processing, and safety features. If quart jars are part of how you preserve — soups, stocks, whole vegetables, meats — this is the one to get.
Can I use my regular canning recipes with this canner?
Yes. The Presto Precise uses standard USDA processing times, so any tested recipe from the USDA Complete Guide, the Ball Blue Book, or the National Center for Home Food Preservation will work directly. The included recipe book also covers the most common foods to get you started.
What can I pressure can in the 23-Quart?
All low-acid foods that require pressure canning: green beans, corn, beets, carrots, potatoes, peas, mixed vegetables, chicken, beef, pork, venison, fish, soups, stews, and broths. In boiling water mode, you can also preserve high-acid foods like tomatoes, fruit, jams, jellies, pickles, and salsa.
